STRAWBERRY GINGER CUCUMBER MARGARITA

Are you a fan of frozen margaritas? You are about to be! This Strawberry Ginger Cucumber Margarita is the perfect drink for these heat wave situations we’re all finding ourselves in lately. The addition of cucumber makes it super refreshing while the fresh ginger adds a subtle spice that cuts through the whole drink and makes it very crisp. Try these and then try to tell me you’re not on team frozen margarita.

Serves: 4- 6
Total time: 15 minutes

You’ll need:
16 oz strawberries or about a quart, roughly chopped
1 small - medium cucumber, peeled, seeds removed and roughly chopped
1 inch of fresh ginger, peeled and diced
1 cup tequila of your choice (I like any silver Tequila for this drink)
1/2 cup triple sec
1 tablespoon agave, simple syrup or sweetened lime juice (I use the brand Rose’s, found at any liquor store)
Juice of one lime
1.5-2 cups ice

Let’s do it!

  • First, process the strawberries, cucumbers and ginger. And remember to save a few slices of cucumber for garnish.

  • Add the chopped strawberries, cucumbers and diced ginger to a blender. Add the sweetened lime juice and fresh lime juice and blend until very well combined.

  • Add the ice, tequila and triple sec and blend again until well combined.

  • Pour into margarita glasses and garnish with fresh cucumber slices. Keep the rest of the pitcher chilling in the fridge and beat the heat!
